Kute Kultures is the result of curiosity, an open heart, and a series of fortunate events.
I came to fermentation through a lens of conservation and reduction. I'm always looking for ways to eliminate or reduce packaging in my life, so that was my goal when I signed up for a Kombucha & Kefir class at Taller Vivo in Mexico City, a place I called home for several years.
The workshop took place on a summer afternoon in 2023, held in a gorgeous, historic building in the heart of the city. It was a beautiful and welcome opportunity to make connections in a place where I was still a newcomer. The class brought in so many unique perspectives: a boutique hotelier, a vegan cheesemaker, an actress! That day, we all joined together to make our own magic, transforming tea into kombucha and milk into kefir.
We each left the class with starters, not only for our ferments, but for future friends, too.
What started out as a pursuit for less, turned into an entry point for expansion. Since that first class, I've continued to use fermentation as a way to learn from and connect with others and the world. In a few short years, it has taken me from Mexico City to the islands of British Columbia and all the way across the continent to New Brunswick and Nova Scotia.
Now I'm back in Houston, Texas, my hometown and the place I've spent most of my life. My focus here is connecting with local communities and making my own transformation from student to teacher (check out the Kute Klasses page to see where we'll be fermenting next!).
The learning (and fermenting) hasn’t stopped….
I consider myself a baby fermenter for now, but my goal is to grow into a peer of the teachers and educators who have led and inspired my journey. Alongside teaching classes, I'm also applying to graduate school that will take me (ojalá!) to San Sebastián, Spain to pursue a Master's in Food Fermentation at the Basque Culinary Center.
